frying in a skillet

Hi, all:

I'm relatively good, I.E. confident when it comes to baking or roasting things in the oven, but I can't seem to bring myself to try frying in hot grease. Does anyone have any tips or hints on overcoming this, a sure-fire way of putting food in a hot pan without touching the sides of said pan, etc. I'd love to hear it.

Feel where the heat is comming from when putting something in the pan.

Are you talking about just frying things like egs, potatoes, burgers, etc or deep frying things ;like fish, hush puppies, and things?
If frying eggs, burgers, etc just feel where the heat is coming from, dump in the food, then tilt the pan from side to side in a clockwise motion to spread the food evenly in the skillet.
It works great for eggs, potatoes, etc.

If you want to deep fry something then get a ddep frier.
They're pretty easy to use.

Keep oven mits handy. Those guys can go through hell without getting burned.
